Glitch Biscuits



Glitch Biscuits

These are called glitch biscuits because when you drop a spoonful on the baking sheet you need your little brother to stand there and watch and say “glitch” for sound effects.  Ask your dad.  J

Ingredients:
2 cups Bisquick mix
2/3 cup milk

Directions:
Mix together. Drop by spoonfuls onto ungreased baking sheet. Bake at 450 degrees F for 8 to 10 minutes or until golden brown.

Variations:
Add 1/2 cup sharp cheddar cheese to mix. When hot out of the oven, brush on mixture of 2 tablespoons melted butter and 1/8 teaspoon garlic powder.

Crockpot Chicken and Sausage



Crockpot Chicken and Sausage

Ingredients:
Two chicken breasts, cut into large pieces
One smoked Polish sausage, cut into one-inch slices
Four or five medium red potatoes, quartered
One package mushrooms, rinsed clean
One can Cream of Mushroom or Cream of Chicken soup
One 8-oz package cream cheese, cut into large cubes
One package taco seasoning or Italian dressing mix

*Optional:
One yellow onion, chopped
One package fresh broccoli, cut into large pieces
One small package baby carrots

Directions:
Place chicken and veggies in crock pot, sprinkle with seasoning mix. Add cream cheese and soup. Cook on High for 4 to 6 hours or until potatoes are tender and chicken is cooked through. It is OK to give it a good stir about 2 hours into cooking.

Nopales with Pork and Salsa



Nopales With Pork and Salsa

Ingredients:
1 large jar of Doña Maria nopales, drained and rinsed
1 pound of pork stew meat, cut into bite-sized pieces (you can use chicken if you like)
1 jar of your favorite salsa (I like to use anything chipotle!)
1 teaspoon or so fresh chopped garlic

Directions:
Dump nopales, pork, salsa and garlic in a large pot. Give it a good stir. Put a lid on the pot and simmer on medium heat for about an hour, until pork is cooked through. Stir every few minutes at first so the pork does not stick to the bottom of the pot, then check it and give it all a stir every 15 minutes or so.
You can also cook it in the crockpot if you want to. Dump it all in the crockpot with about 1/4 cup water in the bottom, cook on low all day.

Serve over rice or wrapped up in a tortilla. Add beans, rice, cheese, chopped tomato or shredded lettuce as you like. Good stuff!

Applesauce


Applesauce

Ingredients:      
5 or 6 pounds of fresh apples (use good cooking/baking apples like Fuji, Granny Smith, McIntosh or Jonathan, or any combination of these)
1 cup liquid (apple cider, apple juice or plain water)
1/2 cup sugar (granulated or packed brown sugar)
Juice of one lemon (one tablespoon or so)
Optional: Cinnamon, allspice, nutmeg, maple syrup)

Directions:
1.       Peel, core and slice apples.
2.       Throw everything in a big pot and simmer over medium heat for half an hour or so. The apples should be getting soft and starting to mush apart.
3.       Let the apples cool off for just a bit (about 20 minutes) then puree in a blender or food processor or use an immersion blender to puree until smooth.
4.       Use a funnel and ladle into clean pint jars. Applesauce will keep in the refrigerator for a few weeks or may be canned in a water bath canner (follow canning directions for sterilizing jars and for correct processing time.)

Applesauce is yummy by itself, over cottage cheese or ice cream or use it to make Applesauce Spice Cake!
