Applesauce


Applesauce

Ingredients:      
5 or 6 pounds of fresh apples (use good cooking/baking apples like Fuji, Granny Smith, McIntosh or Jonathan, or any combination of these)
1 cup liquid (apple cider, apple juice or plain water)
1/2 cup sugar (granulated or packed brown sugar)
Juice of one lemon (one tablespoon or so)
Optional: Cinnamon, allspice, nutmeg, maple syrup)

Directions:
1.       Peel, core and slice apples.
2.       Throw everything in a big pot and simmer over medium heat for half an hour or so. The apples should be getting soft and starting to mush apart.
3.       Let the apples cool off for just a bit (about 20 minutes) then puree in a blender or food processor or use an immersion blender to puree until smooth.
4.       Use a funnel and ladle into clean pint jars. Applesauce will keep in the refrigerator for a few weeks or may be canned in a water bath canner (follow canning directions for sterilizing jars and for correct processing time.)

Applesauce is yummy by itself, over cottage cheese or ice cream or use it to make Applesauce Spice Cake!
