Nopales With Pork and Salsa

Ingredients:
1 large jar of Doña Maria nopales, drained and rinsed
1 pound of pork stew meat, cut into bite-sized pieces (you can use chicken if you like)
1 jar of your favorite salsa (I like to use anything chipotle!)
1 teaspoon or so fresh chopped garlic

Directions:
Dump nopales, pork, salsa and garlic in a large pot. Give it a good stir. Put a lid on the pot and simmer on medium heat for about an hour, until pork is cooked through. Stir every few minutes at first so the pork does not stick to the bottom of the pot, then check it and give it all a stir every 15 minutes or so.
You can also cook it in the crockpot if you want to. Dump it all in the crockpot with about 1/4 cup water in the bottom, cook on low all day.

Serve over rice or wrapped up in a tortilla. Add beans, rice, cheese, chopped tomato or shredded lettuce as you like. Good stuff!
